Agree on Apocalypse Now. Also on DePalma. Snake Eyes opening was superb, but the rest of the movie stunk. The opening of Femme Fatale is more superb though. Must see.
Some other fiims not previously mentioned with great cinematography throughout, or certain moments, shots:
Days of Heaven - Terrence Malick and Nestor Almendros masterpiece of cinema.
The Silence, Persona, or most anything else in B&W by Ingmar Bergman and Sven Nykvist.
Titanic - Looking down the tilting ship, among many others - Russell Carpenter and James Cameron.
Girl with a Pearl Earring - The first shot of Vemeer's studio got an audible gasp out of me, and others in the audience as well.
Vanilla Sky - John Toll's "almost over the skyscraper's ledge" shot was breathtaking.
Halloween - the opening Steadicam POV shot, Dean Cundy.
The Shining - More great Steadicam work, Kubrick, Brown, Andrews.
Saving Private Ryan - The opening DDay battle.
Gladiator - Shots of hands through the field. Also when Crowe comes home and his reaction. (Too many more Ridley Scott films and moments to list - Blade Runner, Black Rain, Black Hawk Down, etc.)
Panic Room - The huge tracking/CG through the house shot.
Children of Men - from just last year, some amazing shots, especially the 5 minute hand held shot running through the refugee camp.
Miami Vice - Helictopter shot over Iguazu Falls, more stunning aerials as well - Dion Beebe and Michael Mann.
Cliffhanger has some stunning helicopter shots of the Dolomites in Italy too. As well as the (absurd) opening sequence.
And finally the "Toss the axe at the ducking camera" shot from Last Action Hero (don't laugh, you'll duck too!).
