What Is The Film Look?

Looking for different explanations based on the description below, not opinions on what the "film look" is, you'll know why if you read the paragraph below.

Although films throughout the years naturally have different looks based on the needs of the film, I see two categories you could easily throw almost everything into. High Contrast vs. Low Contrast. My low I don't mean milky either. Lots of older films even from the 90s and back tend to have a lower contrast feel when compared to lots of newer films today where high contrast and broad differences between the brightest whites and darkest darks is common. There is no one answer to what the film look is, but how would someone describe what I'm talking about? Do you agree or understand what it is I'm trying to describe? Even skin tones, there's a typical reddish feel that a majority of older films have, while very orange/peach tends to be the more common choice now with a few in-between styles. I'm not trying to get into composition/framing, or anything of that sort, even if it does effect what I'm trying to describe. To more specifically state a question I'm looking for answers to...what is it about those older films that makes that image look the way it does? I feel like I understand the higher contrast images more and can pinpoint what it is that gives it its look, but the older films are a bit harder to replicate for me when shooting. The best I can describe it is flatter contrast and using more fill than most people would use nowadays...almost an old TV show feel but in 1.85 or whatever other aspect being used. Am I right? Is it the increase in fill used along with the typical red skin tones? Just looking for opinions on this issues specifically and how you'd describe then vs. now. The spiderman movies (especially #1) had a feel like that.

Examples of the older feel things shot on film tend to have...
