We used to use a Brita pitcher filter. Now we use a Pur on-tap model.

when you put a new filter in the pitcher it does take a while for the water to drain thru. after a while it filters much faster.

If it's a granulated carbon filter, this may mean that the water is forming channels through the carbon, hence drastically decreasing the effectiveness of the filter. Over time, the water wears away some of the carbon, so it isn't going through as much of it as it passes through the filter. So less particulate matter gets captured. It's convenient, because it takes less time to filter, but doesn't really do what the filter is supposed to do.
