video mixer and camera advice

I have a friend who owns a restaurant and has an annex where he holds parties catered by professional chefs. he would like to have cameras installed so the customers can watch the kitchen and the cook can communicate with them, sort of a live kitchen show kinda thing but the customers are not in the kitchen.

I need some advice to pass along as to what equipment he needs. he wants to have 4 cameras and to have someone, maybe the chef, be able to switch from a 4 panel all angle view to a single camera view. most cameras, if not all will be stationary.

I know an a/v mixer would be necessary I just would like some suggestions from someone who has work with them. I also don't know what low cost hd camcorders allow live export out.

Oh, did I mention he wants to record it all. so we would need a video monitor output and one to a computer with adobe onlocation or something.

Thanks to any advice given
