Am trying to do a series of video segments using a Viosport H20 "helmet cam" and my DVX100 as a deck.

Want to use a handheld microphone to do on-street interviews. Tried a Shure SM57 but I can't get an audio signal. Can't input to XLR because it's in VCR mode, so am using an XLR-RCA adapter into the RCA audio in jacks.

Using the Viosport's built-in (crappy) mic works, but I need to input a hand mic. Do I need a different mic? One w/phantom power?

Hellllp! Under deadline pressure and need to solve this ASAP.

An SM57 is a dynamic mic (not condenser) so it does not need, nor can it use phantom power. What you need is a preamp to boost the mic level signal to the line level the RCA in expects. Preamps are found in video cameras with XLR ins, sound mixers, and as standalone AC power units. I have never used a battery powered preamp, but such things do exist --- which you would obviously need with a helmet cam situation.

Try a Google serarch for "Battery Powered Preamp XLR".
