right outside my box this..

Ive been asked to film a few 45min 'round table sessions' and provide video with subtitles.

What is the norm for doing this - some sort of VR software or good old typing?

You should check out rev.com. This is a subtitle and transcription service. It's a dollar a minute. You post the video to them and they transcribe. You get a sidecar file with the timed subtitles. The site also has a lot of great info on how to work with sidecar files, etc. I used them once and was very happy with the result.
