ive seen the other stop motion post on here, but what im doin with it is a bit different from what others are using it for. im not trying to animate anything. i just wanna do a stop motion action sequence like on the movie snatch at brad pitts moms wake.

since im not animating anything, couldnt i just shoot normal, then in post remove frames? or creat stills in post?
 
Yeah I'd just do it in post - Premiere has an effect called "posterize time" which accomplishes this, I'm sure most other NLE's have something similar.
 
acho, in AE is cool for this, along with some clever cuttin'.
Strobing the action as you mentioed will help too.
