in editing, how do you split an audio track which was recorded using a mono mic so that audio plays through left and right speakers.?

A mono track will play through both speakers automatically. So I assume what you have is a track recorded in stereo, but with a mic connected on only one channel -- thus giving you one channel of sound and one channel of silence.
If that's the case, most NLE's have the ability to copy one channel to the other. In Premiere 6.0, I would simply right-click on the audio track and select 'Duplicate Left' or 'Duplicate Right', depending on which channel had the sound. Check the documentation for your editing program.
