Special settings to acknowledge 25p in FCP 4?

There is plenty about capturing 24p and pulldown settings and so on in the FCP manual- but do I need to do anything to make sure my footage shot at 25p is not captured or rendered into 50i? it is not really mentioned...

Is it as simple as capturing normally and leaving field rendering off?

I'm no expert, but I can tell you what I did - and that I had the same concern...
I used the default DV-PAL capture mode. I then printed 1 frame (a jpeg) and sent it off to DVFilm in Texas and asked then if the frame was progressive or interlaced. They confirmed that it was progressive.
