But how do you achieve that 'cinematic' look ratio-wise?

For instance, this trailer that I just saw someone post whilst browsing threads:

When you go full screen it doesn't fill my 1920x1080 screen - it has the black bars top and bottom

Anytime you fit a video format with one aspect ratio inside a format with another, there are limited options for handling that. Cinemascope wide screen on an HD format display as in the sample you posted is either going to be letterboxed top and bottom, or if it fills the screen the sides are cropped off for 16:9, or the image is squeezed vertically out of proportion and looks wrong. Take your pick.
