A typical durometer range is 74a to 95a with the higher number being the hardest.
You can find specialty wheels that go farther in either direction, but a 74a would be really soft in action even though it won't feel soft by pressing on it with your fingers. Go with those.
I've got a 5 gallon bucket of wheels 'cause I'd planned on making several dollies for the past two years, but I used half of them after ordering decks/trucks so I could give a cool skateboard to every kid I know.

Be careful: if your wheels are too soft, the weight of the dolly/camera operator/etc. will cause those soft wheels to change shape just enough to create a wobbly/non-smooth dolly ride.
