I am desperately trying to get a handle on:

compression and output and rendering and interlacing and deinterlacing and codecs and 24p v 24pa etc. etc. etc.

I just cant get the quality i know i can get with my dvx and rather hassle you guys with questions i dont even understand can you tell me -

Where is a good online resource that explains these things from the ground up?

I really appreciate it

Ok... how about this...
Lets say i have a 50 minute performance of some kind shot in 24p with my dvx100b

What upload settings would I use (I use CS4 Premier Pro) to ensure the best end quality
After adding a title and credits...
What export settings would I use to achieve for:
highest possible quality (disregarding file size)
best for youtube
highest quality for dvd

This is an attempt to get a handle on all of these options and what they do

Thank you for any replies.

I don't mind helping you if you can be a bit more specific. You say you're not getting the maximum quality possible? You can indeed create issues with interlacing with such footage, but in order to help you best, I'd need to know what the exact problem is. Is it motion? Blocks in your final encode? Stray interlaced frames? Something else?

It's extremely outdated in terms of solutions, but a classic reference for interlaced systems is www.100fps.com

You can find many other more modern explanations online, and wikipedia has decent diagrams of the process too. Don't concern yourself too much with telecine patterns; they'll boggle your mind. It's just important to know what type of patterns are used (3:2 on 24p, 2:3:3:2 on 24pA).

Everyone here will tell you to use 24pA for superior results; this seems to be true only to the extent that most NLEs have an easier time removing pulldown from those streams, but there is no reason to have "higher quality" in 24pA vs. 24p, as a perfect inverse telecine is still possible with 24p... Most NLEs just seem to balk at it, so shoot 24pA anyway.
