Simple question here:

Focusable lights allow you to adjust the beam angle for more control of the light. Typical types of lights that allow focusing include: ellipsoidals (can be very precisely focused), fresnels (good control from flood to spot), and some open-faced instruments (usually marginally focusable). It's all about controlling the quality of the light and putting the light exactly where you want it, preventing unwanted spill.

Not necessarily. Focused lights generally look harsher that floodlights (cast more distinct shadows), and they don't cover as wide an angle. So it's all up to the look that you want and your budget. You can make a floodlight look smaller by using barn doors and flags.
