Should I be shooting wide-open on my EX1 when using an LEX?...

I use an EX1 with a Letus Extreme, and was just wondering, should I be shooting wide-open on my camera, or closing the iris down a couple stops to improve focus on the ground-glass?

Its always better to shoot at 2.8 or so but the Lex should be acceptably sharp even wide open on an EX-1. At that point its a trade off as to whether the LEX or your 35mm glass is better wide open and only looking in good monitor will tell you for sure. Your best with both lenses a little off max, but you may be fine with both open if you need the light.
