I'm using a Sony FS700 and not sure what the advantages of Linear PCM vs. Dolby Digital would be as an audio recording format. Anyone have any insight?

Never use any lossy compressed codec when recording or editing. Compression is BAD NEWS during production.

But compression is great for DISTRIBUTION, AFTER you are done shooting and editing, etc.

Always use uncompressed linear PCM (WAV files) for recording and editing - preferably at 24-bits.

Only compress (if you have to) after all recording and editing has been finished - for the final delivery format.
