Recommendations for 7D + H4n workflow / Ground up production package build

I currently don't own any gear other than an old sony handycam, an ancient no-brand shotgun mic, a few clip lights, and half a roll of gaff tape.

Due to an awesome job opportunity, I will have the budget (albeit a somewhat limited one) to build a complete (by my standards) production package from the ground up.

Unfortunately my understanding of audio gear is pretty lacking (extending only to how certain types of mics function, and brand recognition. Oh. And you get what you pay for). I need some recommendations on gear, workflow, and 'how you would do it'.

I'll be shooting video on a 7D (possibly 2), and recording audio through the H4n. (I'm not necessarily set on the H4n, but I am set on the 7D. If there is a better and less expensive option for audio, then I'm all over it.) Since I am building up my own package for the long run, I'm not too opposed to spending a little more to get something that will last me an extra 5 or 6 years, but everything (including the camera, supports, tripod, audio gear, cables, etc...) needs to fall within a 3-5 grand budget.

The project will involve shooting in a large machine shop (in a similar fashion to those car-restoration-under-a-tight-deadline shows); shooting outdoorsy river ambiance; shooting loud, moving machinery; and shooting interviews in an office, in the shop, and outside. There will probably be some voice over as well.

Given these locations, how would you do it?

I'd need something mobile for shoulder mounted news style stuff, and I'll need a boom or lavs for the interviews...?

Educate me please. (Or point me to the nearest reliable resource.)
