I have the 8 core 2.8 that they recently stopped selling. I only have FCE (waiting for FCS3) but even using that and iDVD I often push all 8 cores pretty hard. Especially when using stuff like Visual Hub at the same time. I love the way that with so many cores you can run several things in the background and what you are working on is unaffected.
