I've got a clip open in the viewer, and I just want to drag the video into the timeline, without the audio that is attached to the clip. Is there some type of Option, CTRL, type keyboard shortcut to do this? Thanks.

no, just drag it into your Bin, drag it into the timeline, hit apple L and delete the audio.
If you unpatch the source and destination tracks for A1 and A2, you could just overwrite or insert into the timeline without audio. This Final Cut Pro tutorial explains. Hope this helps.
