Pulling video from DVD (for Mac)

My friend's wife's company has some manufacturers' DVDs for safety equipment and they want a cut down version of the video to put on their website. I'll be editing in final cut, but I was hoping u guys might point me in the direction of:

1) software for pulling the video off the DVD.

If I can find the best program, I should be able to transcode it myself...

Mac The Ripper is what I use. I am not sure if the below is the latest version on not. Check Google.

What settings do you use for the export? That's what I'm trying to figure out at this juncture.

Also, unbeknownst to me, I discovered that VLC can convert files as well.
