Post vs. In-Cam: Some Questions

So I'm shooting a low-budg music video using the dvx and either a GL-1 or Panasonic pv-gs500 as a second cam for cutaways. I'm going to shoot extremely thick and contrasty lighting scenarios and it will ultimately be black and white. This will never be output to film, but may be on tv at some point... So my questions are these:

Is it better quality to shoot in color (it will be of course in 24p) and tehn B&W it in post, or can I save myself this step by just swiching the cam to B&W mode?

For the second consumer cam, is it better to shoot in 30fps to get closer to the dvx, or shoudl i shoot in regular video and then filter it in post to emulate 24p closer? (I realize they won't match exactly, but want them to feel at least equally cinematic)

Any thoughts on why the GL1 may be better or not as good as the pv-gs500?

I would shoot in color and desaturate in post. This way you can use your camera settings to get a nice punchy, contrasty look in camera which will give you more latitude in post to convert it to B&W.

As far as the cams go, I would think shooting 29.97 and using something like Magic Bullet to get 24p would be the best bet. I would use the GL1 since that is considered a "prosumer" cam, but I'm not familiar with the GS500.

Totally agree on the shooting in color thing. It gives you more options when you go to BW later.
