How to write scenes where they are overlapping?
If the first scene ends with the beginning of the third, and between them, there is completely different scene.

Or the third scene is finished with the beginning of the first.

Many of the techniques that you see in transitioning between scenes are done at the postproduction editorial stage. The 'writer' has pretty much zip to do with them.

The most popular 'writer' technique to indicate a quick series of shots, is to use the word "MONTAGE". Then list shot elements of the montage series.
