Organizing and editing a large project

So I'm working on a documentary project that will be following a group of people bringing healthcare to two small villages in the Democratic Republic of Congo. I'll be there for two weeks over January and February.
I'm starting filming right now and accumulating folders of footage and I want to try to head off any disaster.
How should I organize this. I really won't have a clear vision of what this will all be until I get to the Congo. What I'm shooting now will be used.
Should I start editing each days's takes and making sequences of the best stuff and logging them somewhere?
Any advice on assembling a large documentary project?
You can see some teasers of what I'm doing on my site.

Until you have this, anything you do, edit-wise, may well change. I'd keep everything indexed and logged (with detailed descriptions) as best you can.

Here's where P2 meta data would really come in handy.

Keep everything organized in folders and labeled with date, time, location, people filmed, cameras used, etc. Depending on what you're editing with, open up your editor and log each clip with thorough descriptions.
