Can anyone help us figure out how to desaturate ONE color in FCP. We are trying to remove some of the greens from some shots and we can not figure out how. Any help would be awesome thanks.
 
Use the Limit Effect function in the 3-way color corrector to isolate the green you want to desaturate.

Assuming you have the final cut suite your best bet is using the color program. It can be a bit daunting at first if you have never used it but for what you are talking about its the tops. If you are unfamiliar with the program creativecow has a few good free tuts online that could help you achieve the effect you are looking for.
