Couldn't think of anywhere to ask and didn't find this basic question answered after a few quick searches....but -- are drones like the DJI Phantom 4 only controlled via wi-fi? Meaning if you're on vacation somewhere wi-fi is not availble or strong enough you can't fly your drone?

Any serious drone, definitely everything produced by DJI, uses its own radio protocol with transceivers which operate on a different frequency to WiFi and have a much greater range. There may be some toys which operate on WiFi but it's not a real-time protocol so it's not ideal for time-critical control of equipment.
