I'd say try to look for someone that can assemble you a touch screen LCD you could push with your nose , or find someone to wire you a strip & your cam that would mount across your face with push buttons.

You could also try to make some sort of head attachment that you could use to push the buttons with instead of your nose.
 
as of now no footage just editing what my buddys video and thanks for your ideas, when i do get this thing going i'll be sure to post some
