I'm considering a laptop, because my mom has one that she'll let me take. If I can use that laptop for some editing, then I don't need to buy a computer just yet.
Sounds like a solid plan. Vegas sounds right for you, though you can also get Premiere Pro or Adobe Production Premium, with an academic price, for a reasonable deal. Premiere has actually been making headway recently since Adobe launched their native RED r3d file editing capabilities.
Some other questions are, what else is essential that I have besides the camera and software?
MiniDV tapes. Motivation. Maybe some friends. Beyond that, it's all a matter of what you'd like to do. You shouldn't be going out and plunking down the cash for a glidecam right now, you know? Are you basically asking what the fundamental equipment requirements for filmmaking are? If so, you've already mentioned them: camera, mic, and editing package. Oh, and an interesting idea. But we don't talk about those here
You could also think about lighting. Get some white presentation boards from WalMart to serve as flags and bounce cards. Maybe get some cheap halogen worklamps while you're there too.
(it's funny that I've been in a video making class for a year, and I'm still lost on so many things) Of course, I didn't expect to know everything after taking the class.
Bah, don't worry about it. We're all still learning. Motivation honestly is the most important thing to acquire early on. Browse these forums for awhile and I guarantee you that you'll learn a whole lot. I know I did.
