I don't have FCP in front of me right now, so you may have to fill in one or two details, but basically, since FCP has no real bussing, you have to do this:
1) Duplicate the Side track so you have two copies; pan them hard left and hard right
2) find a filter that does a phase invert, and use it to invert the one panned Right.
3) If you can, group these two as a stereo pair - their level has to be identical.
4) Pan the Mid track to center
By adjusting the relative level of the two S tracks to the M track, you widen (towards more S) or narrow (more M) the stereo image.
I've never tried scripting audio filters in FCP... if it's as easy as the video filter scripting, then this should be an easy plug-in to make...
Actually, I don't see any filter in FCP that will do it... strange! However, Soundtrack Pro should handle either the whole mix or just the inversion. It seems you can just send one copy of the "side" track to Soundtrack Pro, do a "Process->Invert", then return it to FCP...
