Is it all done on one big comp? or a bunch of nested ones?

I would do it in one big comp, precomping as needed.

As for the animation in that video...it's not great, so I wouldn't use it as a benchmark to acheive. It's repetive and does not do anything to convey what is being said.

There are tons of these things, but the ones to check out are "What Barry Says" by Simon Robson and "Brazil" by MK12.
