Has anyone ever used one of these? I'm just wondering what's the largest piece of foamboard that it can support. In particular, I'm wanting to use it for a 5ft x 3.5ft foamboard

Has anyone used one you ask? They get used on pretty much every single job, although the Matthews one is double the price of the ones from other manufacturers. Yes, it will support a piece of bead board that size. If you have a 4x8 sheet you need two.

Search arund for a Duckbill or Platapus clamp and you should find it from other manufacturers. The thing is just a vice grip with flat plates and a stud welded on.

Take a look at this telescopic disc holder as an alternative. It holds foam core, sound blankets, light discs, just about anything you can imagine; very versatile.
