Making those murmuring sounds...?

Just FYI, I have been experimenting in mixing and recording for a little over three years now and have had some things I have been able to nail, and others I cannot wrap my head around.

So I am coming up on audio post for my project and I am thinking ahead about what I will need/need to do sound-wise. One thing I have not been able to do AT ALL is make those convincing murmuring noises you would hear in an office or restaurant (walla, right?). For the office environment, I need low, sparse murmuring and for a restaurant environment, you guessed it: constant background talking.

Any time I try and record something, it comes out at being too "there" I am almost certain it is my technique in making the sound. Does anyone have any tips for making something like this? Are there any articles on the subject?

BTW: just got the Sony Sound Effects Series and I LOVE it. Would definitely recommend.

Well, actually I would say that 9 times out of ten what you hear on the big screen was actually recorded in an office or restaurant. Loop groups are used to get more specific Walla but the basic tracks are usually real stuff.
