lighting a backdrop

I got a bunch of interviews in different locations and I'm want to set up a backdrop for them that I can quickly light. So I'm not looking for the infinite look. Whats the best way to do this with the fewest lights? Put one in the middle, on the side? Anyone have examples?

Or single source, one point lighting. I often light from 45* with no fill, & put the subject close enough to the background to cast a shadow on it.

I like shadows as they give a little something else to compose with.
