Don't have experience with ipod, but from what I know, it's not just the storage space, it's capturing software (like DVRack etc.)
Unless ipod has the ability of installing/running a capturing software (which I doubt) then you need a laptop and use ipod as an additional firewire hard disk.
It can be done, all someone needs to do is write a little firmware patch for the iPod to respond to the camera's firewire record/pause signals.
The 60gb iPod photo could even be set up to show you what you've shot on it's screen. The question is there someone out there brave enough to void his applecare and possibly hurt their iPod.
I don't know what messing with the firmware would do to the thing, but I do know there a group of folks that got a version of linux running on the thing. So, it could'nt be that much more difficult to get the thing to record what the cameras spitting out.
From what I have been hearing you will be able to watch videos on an iPod soon...could be sometime this year so the technology is there. I dont know about using it hooked up to a camera though.
Playing videos of the iPod would be no big deal since it'll be highly compressed Mp4 or the new H264 codec (http://www.apple.com/macosx/tiger/h264.html). Recording to the device is a whole other ball game. I'm sure it's not too far off though.
