Any huge advantage in going Xeon over i7?
Intel Core i7-6700HQ Processor (6MB Cache, up to 3.50GHz)
Intel Core i7-6820HQ Processor (8MB Cache, up to 3.60GHz)
Intel Xeon E3-1505M v5 Processor (8MB Cache, up to 3.70GHz)
Intel Xeon E3-1575M v5 MBIntel Xeon E3-1575M v5 Processor (8MB Cache, up to 3.90GHz)

Don't want newer processors because will be using windows 7 pro.

How about these GPUs?
NVIDIA Quadro M3000M 4GB
NVIDIA Quadro M4000M 4GB
NVIDIA Quadro M5000M 8GB

This might help, just a few observations

I would go for the i7 for a laptop, the Xeons are more power hungry.
The Xeons require more expensive parity RAM, that means as it reads a value from the RAM it does a check that the value read is correct, not only do you need this special RAM but it also slows processing down, it takes a few cycles to so this check.
Intesteringly the new iMac Pros are i9 processors and are described as Xeons.

Re the GPU, go for the largest amount of RAM.

You probably want to look for a laptop using the newest 8th generation i7 CPU that can out perform previous generations by up to 50 percent, and they use less battery power.

In this TechSpot review they saw close to a 50 percent increase in processing power compared to the older 7th generation i7 CPU.
