How is this lit?

I'm wondering how the best way to lit this shot would be? I like how the background has so much light, but how do you expose the subject properly? Do you think there was no additional equipment here and just a good location?

Any tips for interviewing people outside to get a similar image to this?

You can get white foam core at places like Aaron Brothers. In a 'pinch' you can use car window shades. Some will have a matte side, and a 'reflective' side, and they will collapse down for convenient packing.

Also, they've either placed him in a slightly shadier area compared to the sunny background, or they're diffusing his sunny backlight with a silk above him. My guess he's standing in an area where the trees are diffusing the sunlight a bit. That's why his backlight on his hair and shoulders looks so soft.
