how is this done

What you need to do is to film your actors against a blue/green screen and/or roto them out. Then you can create your enviroment as mult 2d planes but in 3d space. Then you just 'paint' your actors in black, or whatever color you want, add music, flying things, slap an Apple logo on there and you're done

In AE, the "Fill" effect works for making your characters all black (or whatever color) once they've been keyed.

But, don't even think of attempting this unless you can shoot it on a chroma key wall.

In my opinion, roto is hell. And unless you have a crew of 20 people working on one scene for a week, it's just not realistic to roto out your actors for a project like this.
