Ok, now this thread is really starting to develop. I never had Carolina BBQ even though I made a few business trips to Raleigh. Sorry I missed the opportunity. The best I've had was in a huge BBQ shack outside Austin. I can't remember the name of it, but it was stellar. Where I live there isn't any real BBQ.
