High School Media Lab: Mac Mini vs iMac

I just happened into a large grant that is going to allow me to upgrade my Digital Media lab. We currently have (36) 2011 27" iMacs 20GB i5 2.7Ghz and (2) 2009 Mac Pros that I upgraded to dual hex core, 32GB , GTX970, SSD, and USB 3.0. We just bought two new cameras last year: Sony FS7s. Plus, a couple Some A7Siis and some A6000s. We have a 4K TV for playback, so my advanced students are starting to record in 4K. We use Adobe Premiere CC 2015 to edit.

However, I also teach computer graphics and have three classes of Adobe Illustrator, Photoshop, etc. For those classes it would be great to get (36) Mac Minis and Cintiq monitors (nice education discount), but I am not sure about the Mac Minis for video editing. Obviously I'd max the RAM and get external HDDs. I'd still need a couple 5K iMacs for heavy lifting and playback of 4K.

My other option is all iMacs like I have now, but miss out on the ability to transform my graphic arts class with Cintiqs.

How capable are the Minis for editing in Premiere, After Effects, and DaVinci Resolve for basic color correcting?
