Inigo versus the Man in Black on "The Princess Bride". As a fencer in college, it not only used proper dueling technique and footwork (as opposed to threatrical) but also their banter was dead on correct.

Bonetti, Capo Ferro, and Thibault are all real fencing masters that the hard cases study to become better fencers, which is why they always kicked my rear.

Greatest fights involving fisticuffs:
"Raiders of the Lost Ark." The scenes from "Raiders" that John mentioned are some of my all-time favorite action scenes.
"Raging Bull." Great stylized stuff.
Non-pugilistic confrontations:
Indiana Jones vs. the swordsman in "Raiders of the Lost Ark."
Luke vs. Vader in "Empire Strikes Back."
Dennis Weaver vs. the truck driver from hell in "Duel."
Michael Biehn and Linda Hamilton vs. the Terminator in the original Terminator. (esp. The "Tech Noir" shoot-out)
The Marines vs. the aliens in "Aliens."

Sorry, some of my list repeats what's been mentioned.
THE SEARCHERS - the two guys clumsily hitting each other and trying to be chivalrous.
DUEL - the whole movie.
STRAW DOGS - Pacifist vs. crazy Irish dudes. And no, I didn't forget "The Wild Bunch"
JAWS - Guys in boat vs. shark.
ONCE UPON A TIME IN THE WEST - great showdown at the end. Not allot of gunplay but a great scene.
ROCKY - Best emotional fight scene. Rocky's sense of worth rests on his performance.
RAIDERS - The bar shootout.
CONAN - the end battle.
SUPERMAN - Superman vs. Lex. Mind over muscle, and Lex wins. Great stuff.
SUPERMAN 2 - Superman vs. three villains.
PREDATOR - Arnold vs. an alien who's even bigger than him (and has slightly less of an accent).
ALIENS - Ripley vs. Queen Alien.
LITTLE SHOP OF HORRORS - Man vs. giant man-eating plant.
ROBOCOP - Robocop vs. Ed. Awesome.
TERMINATOR 2 - The last fight between terminators.
LE FEMME NIKITA - restaraunt scene.
PRINCESS BRIDE - Awesome sword fight and banter. Also, the cool part where Indigo takes out those four guards at once. Also, the MIB vs. the smart Italian guy.
CROUCHING TIGER - the fight between the two women.
PHANTOM MENACE - Jedis vs. Darth Maul.
MATRIX - Neo vs. Morpheus. Took kung-fu and made it plausible.
KILL BILL 2 - Elle vs. The Bride. I loved that scene. Great fight. Great way to end the fight.
SPIDER-MAN 2 - Spidey vs. Doc Oc. The best superhero fights ever.
Okay, if I had to pick one, I'd go with DUEL. The duel is the whole damn movie.

You're all probably going to laugh at me for this one, but I loved the fight between Hugh Grant and Colin Firth in Bridget Jones' Diary. They fought like yuppies who hadn't thrown a punch since grade school, which was absolutely right for the characters. It was a pretty funny scene.
