I formated it as a mac os x extended journaled. Is that the best format for capturing footage to it and cutting all the footage off of it?

I usually don't use journaling on my media drives, but yeah you're fine.

what is journaling? My launch drive is so I figured. Should I go case sensitive too? How do you do yours?

it's a file-system integrity thing... some people say it slows the drive down a little. so it's kind of a toss up.
Journaling is a method of protecting against some kinds of data error, and is definitely a good thing. Doesn't degrade performance.
Case-sensitive is irrelevant; if you go that way, you might have problems if you need to exchange files with other computers, so don't.
I have my FW drives set up journaled, not case-sensitive. However, I'm not a working pro - just a hobbyist, so I'm not after the ultimate in performance.
