Google Docs alternatives for self-hosting

EDIT: I found a workaround for the Google Docs snaffoo, so I might stick with GD for now. Seems the fullscreen edit option is still there in GD but only for old documents, not when you make a new document. So I took an old document (with fullscreen edit function intact, ctrl+shift+f) and made a several copies of it, with content deleted, to use as blank templates for 'new' documents; this lets me make 'new' documents (using an 'old' document as a template) and get complete full screen editing using F11 to maximize Firefox and then ctrl+shift+f in google docs to hide everything but the words I am typing (looks pretty sweet, total white screen and what I type).

I use Google docs a great deal, for initial story brainstorming, outlining, treatments, before I then use Movie Magic Screenwriter offline for screenwriting.

But I am a bit peeved at Google-- if you make a new google doc now you can no longer view it full screen (View:Fullscreen, or ctrl_sh*t+f) like you used to. WTF?

FYI, fwiw, I got to thinking, and discovered a couple of opensource (as in free) alternatives to make my own google docs web based Desktop environment hosted on my own server space (I use lunarpages.com, very cheap, high functionality). Think of the ramifications-- the ability for complete hacking customization (aesthetics, etc), complete and utter privacy of story ideas and screenplays, no surprises in the future with changes or fee$ from Google, no spying from Google for marketing purposes.

Check out this if interested EyeOS, a complete web based desktop environment, opensource, I can install it on my lunarpages space, so could you. :Drogar-BigGrin(DBG)
There are two versions, the earlier version 1 with more apps:
http://classic.my.eyeos.org/
and the beta version 2 with fewer apps:
http://beta.my.eyeos.org/
You can login and try it out by signing up (takes about 30 seconds, really) as a 'new user' at the login screen, with any fake username and fake password and fake email, at least I did. I was able to create and save a document, a notepad text file, and even upload my own background image for the web-based desktop. I am intrigued to say the least.

Another alternative I have yet to explore is OpenGoo, also open source and could be installed on lunarpages.

I am still in research mode, but I like the idea of not being under the thumbs and future surprise changes of google, and not being spyed on by google for marketing, having complete control over my files on my server space which also means super duper easy data backup using an ftp client such as ws_ftp or filezilla.
