Garden State time lapse effect?

For those of you who have seen Garden State, they use the time lapse technique in the party and on the plane at the end (on the plane with a slow dolly in). How is this effect achieved? I assume you just have your subject sit as still as possible and then let everyone around him move and then you speed it up in post? Or is it more complex than that? Will it look any worse on DV?

I think it is just that simple. If you have an actor who can maintain a certain stillness, it shouldn't be too hard to do.
