I'm still looking for some 'good' fried chicken, anyone?

I have A+ dogs and burgs recipes that I'll post tomorrow. Too long to post now but thought I'd fire up the ol dvx bbq.

Lets startout easy....good stuff!

Portobello mushroom and spinach tartines with roasted garlic spread

INGREDIENTS
6 oz. soft tofu, drained
6 cloves roasted garlic
1 1/2 teaspoons olive oil
1 large portobello mushroom, sliced
1 large shallot, sliced (1/4 cup)
1/2 bag (3 oz.) baby spinach
3 tablespoons grated Parmesan cheese, divided
1 6-inch whole-wheat baguette, sliced lengthwise and toasted

DIRECTIONS
1. Place tofu and garlic in blender or food processor, season with salt and pepper, and blend until smooth.
2. Heat oil in skillet over medium heat. Sauté mushroom and shallot three to five minutes, or until softened. Stir in spinach, and sauté two minutes, or until wilted. Add one tablespoon of Parmesan cheese to pan, and remove from heat.
3. Spread a little less than one tablespoon of tofu-garlic mixture on each baguette half. Top with mushroom-spinach mixture, and sprinkle with remaining Parmesan cheese. Toast under broiler 1 to 2 minutes, or until cheese begins to brown.
Roasted garlic cloves:
You can now find roasted garlic cloves in jars at supermarkets, but it's very easy to make your own. Simply trim the tops of whole garlic bulbs to expose the cloves, set on a piece of foil, and drizzle with olive oil. Wrap tightly in foil, and bake 30 to 35 minutes at 400° F, or until garlic bulbs are soft. Cool, and store in the fridge up to 5 days. To use, squeeze roasted garlic from cloves.

I have recipes i use when cooking but it's all in my head.

One thing I do love is a Tuna fish sandwich w/ pico de gallo in it.

Delicious.

Cilantro makes everything taste better.

I havn't tried cilantro in tuna yet. I have used dill dip which tastes good.

My Burger:

Everyone I've made these for look surprised on the first bite and say "wow, that's
pretty good." It's kind of like the Big Mac.

I shape ground beef patties using margarine lids and freeze them for at least 1 hr
so they hold their shape. They fry up to the right size for a bun too.

*3 buns.
On two of those buns I add:

*...a spread of Dill Dip that you buy for potatoe chips.
That has cream cheese in it also.

*... chopped lettuce

*...I premake a small container of about 1 cup Miracle Whip and add a few
tablespoons of Kraft French Dressing, the orange stuff.
Then a teaspoon of sugar, a teaspoon of juice from a jar of pickes.
Sometimes a teaspoon of lemon juice if I have any around.
Mix that into the chopped lettuce.

* A dab of ketchup on the top bun and maybe a little chopped onion.

*Add the 2 patties.
Then nuke it for several seconds to warm it up.

My hot dog:

This is pretty simple but I'm surprised how many people have said
they've never had a hot dog like that before.
Everyone likes them.

*I use Maple Leaf dogs and light colored buns. It's hard to find the right bun.
*Half a slice of processed cheese, the sliced stuff.
*A couple table spoons of sweet green relish.
*Some coarsely chopped white onion on top.
*I pass of mustard.

Then stick the whole thing in the micro wave for about 15-30 secs/dog.
