easiest/cheapest capture straight to HD?

I believe you need a laptop with appropriate software, a Firestore or a CitiDisk, although people have reported difficulty getting the CitiDisk to work adequately. Searches will reveal numerous threads with loads of information on this topic.

There is SUPPOSE to be a HD version of DVRack out that will capture to hardrive. We use Sony VX2100s and firewire to laptops with external hard drives to capture our church services. My VX2100 is about 2 years old and it has had about 4 tapes ran through it, but has recorded a few hundred hours of footage. This solution is only truly good in a non-run and gun setting.

There is an HD version of DVRack, or at least there was. I don't know if you can still buy the app separately, now that Adobe has renamed it "On Location" and bundled it with their Creative Suite package.

For the DVX100 there are a few hard disk options, including the nNovia QuickCapture and the FireStore FS-4, and the Sony DR-something. Through a laptop you can use just about any NLE software to capture live DV streams, although something like DV Rack makes for a superb capture tool.
