anyone use contracts stating that the doc subject can't jump ship mid shoot and have someone else do a doc on them?

I use location ageements and model releases... but does anyone use a 'jump ship and go elsewhere' contract?
 
try inserting an exclusivity clause within your main agreement with the talent. can determine length to be for shooting of project, until airdate within a set time period, whatever you are comfortable with that they will agree to.
 
You may also want to consider adding a 'kill fee' into the contract that basically states if the subject decides to quit the project for whatever reason and picks up the project with another producer and you're not involved, then you get a fee for your time.

I would also reccommend that you make it a fee and not a % of profits.
