DIY Craft Service for one location feature

You'd for sure have to get a city permit, and the Public Health folks would go over the kitchen with a fine tooth comb. the only potential problem I would foresee with taking this on yourself is the public health aspect; wht happens if they do a snap inspection ( and they tend to do just that with temp set-ups), you fail for some reason and they shut you down, middle of the day, middle of the shoot?
Helath depts can be miserable to deal with and if you get shut down, you're tanked. Craft/catering companies have the same potential, but if they're any good they'd also have a back-up plan. Tough call...I guess it comes down to your own risk tolerance.
But then, none of us would be in this industry if we weren't will to take risks, right?

Just a tip: no one wants pizza all the time. And if your crew and cast have come from a number of sets, they've had a lot of it.

Yeah, I'm thinking that the possible cost savings of DIY Catering might not be worth all the hassle. I'll probably just hire some professionals. Thanks - CT
