I had a talk with two people. One is a director and the other is a producer. They said they usually took 10% of gross profit of the movie in addition to their salary. Is this information correct?

Maybe for them in that particular instance, but generally that's not a hard and fast rule. A lot depends on your status in Hollywood, how good your contract will be negotiated, how badly you want to make the movie, ect. ect. ect.

Everything is negotiable... I am involved with a film now with an established director (big budget studio productions) and producer, but for this film took no salary and 5% each of equity stake after investors and deferred are made whole.

I did some searches and it looks like 5% is more common. The people I talked to are not that well known.
