Different Film Stocks

For the production of Eyes Wide Shut, I hear that Stanley Kubrick and his director of photography tested out many different film stocks before settling down for a particular type. What were they testing for? What differs between different types of film stock, aside from different ASA/ISO?

Grain, differences in highlights and shadows, subtle and not so subtle wasy the film stocks handle color.
