This zombie movie I'm making - I want the zombies do die from being impaled by a cross. how can i achieve this gag "safely" !?

The simple way is to show the impalement from side-on, i.e. the cross actually goes behind the impalee's body (and through a blood bag etc if gore is needed) then cut to a front/back shot of the impalee now with a fake cross end poking out from their chest/back (actually on a harness beneath their clothes).
With enough care, this can actually look quite good (it was pretty much the only choice pre-CGI) - or done badly it will look hilariously cheesy (which may be a good thing, depending on your movie
