there has got be a simple way to make credits so I can copy and paste a document into final cut with out spending hours getting it right? any suggestions or tips?

I usually lay them out in Photoshop or Motion. I.e. make a document whose width matches your video format and then height is however long for all of your credits. Then use keyframes to animate it in FCP. Use TIF or .PSD for best results.
