Yup...Garageband is perfect for this. i am starting a podcast (i think...I am trying anyway) and Garageband is SLICK.

You'll probably also want to submit it to iTunes. For that, you need a proper XML (RSS) feed of your Podcast.

There's probably some kind of free service which will do this for you, it's worth a Google since if you're not into web developing then you might find generating a feed quite daunting
EDIT: Yes, I was right, there is a service called PodBean with a free option which gives you 5 GB of monthly bandwidth, 100 MB of storage (not much) and it will get it on iTunes for you, I think. Take a look.
